Welcome to the newly renovated Factory Eatery & Spirits located inconspicuously on the ground floor of what is now remembered as the old Chocolate Factory in Ballston Spa.
This mill complex was built in 1879 by George West. You see, prior to the Civil War, grist mill flour sacks were made from cotton; with demand for flour sacks high and cotton supplies low, the first flat bottom paper bag was invented in the world; imagine that, right here in this old mill. At one point the mill produced two hundred tons of paper a month... that's five million bags per day!
Purchased in 1919 by Frederick Bischoff, the sweet aroma of chocolate smothered the quaint little Village of Ballston Spa for years. Sadly, during World War II sugar rationing and extreme difficulty obtaining the finest cocoa beans made the Chocolate Factory close its doors in 1945.
The Old Factory remained vacant and deteriorating until Mary & Jerry DeFilippo purchased it in 1997 transforming the complex into Ballston Spa's first professional office building. Owners Mary DeFilippo & Gregg Thomas created the area's largest and greatest historical transformation. One can expect very reasonable prices while enjoying a wide variety of popular "Factory Favorites" in a warm family setting. A sense of nostalgic pride overwhelms you as you dine at "The Factory" knowing many an Ancestor has labored in the old mill complex.
